Yokohama Mama Rice au Gratin

2 slices bacon, diced

1 onion, chopped

3 cloves garlic, chopped

3 cups cooked white rice (refrigerated two days to “age”)

1 10.5-ounce can cream of mushroom soup, thinned with a bit of milk

1 cup grated Swiss and cheddar cheese

Brown the bacon, onion and garlic in a skillet. Add the rice and thinned mushroom soup, mixing well. Pour the mixture in a casserole dish, topped with grated Swiss and cheddar cheese, cover and bake at 350 degrees for 30 minutes. Remove the cover and let the cheese brown for five or 10 more minutes. Garnish with sliced green onions. Servings can be sprinkled with a dash of salt and a shot of Tabasco to an individual’s personal taste.
